Cynthia Main left her job running a salvage building materials wood shop at the ReBuilding Exchange in Chicago Illinois in 2013 to spend a year at Tillers International: a traditional rural skills school near Kalamazoo, Michigan. There, she was able to dive into more traditional woodworking and blacksmithing. Together with Doug Stubbs, she created Sunhouse Craft. Broom-making may have claimed her, she says, and allowing that to happen feels to her like a reclamation of sorts.
This mini French rolling pin is made from sustainably harvested Ambrosia Maple or Walnut. It is a beautiful piece, so easy to maneuver for little hands, too. Great to roll out the pepperkake dough or that pastry dough for that galette you've been planning. Here is a quick recipe trick for galette dough:
Ingredients
- 200g flour and a tip of a teaspoon with baking powder - secure this in a freezer-proof container and let it sit in the freezer for an hour or longer
- 160g salted butter (but not too salted) cut into cubes and also popped in the freezer for just as long as the flour
- 90g cream-cheese (I like the blue-lid Tine kremost the most because it does not leave any funny cream-cheesy taste behind)
- 50-100ml water
- 1 to 2 teaspoons of apple cider vinegar (mix into the water above)
How to
Tip the flour into a food processor and add the cream cheese. Mix a bit till it resembles chunky breadcrumbs, then add the cubbed frozen butter and give it a good mix.
You may do the next steps in a bowl, using a stand mixer or your hands. Add the water with vinegar gradually and feel that the dough does not get too soggy. It should feel like a great clump of non-sticky cold butter. Make sure to work the dough well with your hands in the bowl or on the kitchen counter.
Once the dough feels ready, pop it in the fridge for a bit till you are ready with your filling. Once ready, flour your work surface and put this French rolling pin to good use :) Have fun!
