Ayae Maki Fredheim is originally from Japan. She moved to Norway with her husband in 2013. That is when she discovered her love for coffee and her passion for roasting started blossoming. Aya started as a barista at a café in Oslo in 2014, began roasting in 2018, and became the head roaster in 2019. She remained in that role until 2023 when her son was born. Motherhood has a certain way about empowering women to follow their dreams. Aya started her own roastery, and after months of planning, she officially launched Hibi Kaffe in November 2024.

Hibi means daily in Japanese—better coffee for your everyday moments. Basically. Aya says: "Starting this journey has been amazing, and I’m so excited to share it with others!" Equally amazing is the way that our paths crossed and that was a pure coincidence triggered by our common interest in sourdough baking, and Aya and Leif's hevet.no collection of proofing baskets.

La Huaca is a clean and vibrant natural coffee from Peru. It offers fresh berry notes of red currant with a hint of floral character, like hibiscus. Its balanced medium acidity makes it a perfect choice for an after-meal cup.

at the farm: This natural lot comes from Jose Nicanor Zurita’s 4-hectare farm. La Huaca farm is located one hour and 30 minutes from Jaén at an altitude of 1,900 meters above sea level, La Huaca is a 4-hectare coffee farm owned by José Nicanor Zurita. Unlike many remote farms in the region, all of the land is accessible by car, making transportation more convenient. José cultivates Yellow and Red Caturra, along with Yellow Bourbon. Like most adobe houses in the area, the farm’s house is made with a calamine roof. In addition to coffee farming, José owns an old 2000 Toyota Hilux pickup truck, which he rents out to transport local producers and deliver parcels between his town and the city. This side business provides extra income to support his wife and two children.
